Mock Barbecued Spare Ribs (no bone)

I love tofu and have since the 70's. I have many recipes and this one is my favorite. I just wish "the man of the place" like tofu like I do.
He does not like it at all.
Freezing the tofu changes the textures, making it chewy.

Tofu Ribs

2 - 14 oz. firm tofu (frozen and thawed)
Your favorite barbecue sauce
Marinade:
3 Tbsp creamy peanut butter
1/3 cup hot water
1 Tbsp paprika

Squeeze the water out of the tofu, I used a clean dish towel
Cut the tofu into 1/4 inch thick strips.
In 2  9x13 baking dish that has been lightly coated with oil place the strips, single layer. Mix the marinade ingredients in a bowl with a whisk until smooth.

Spread marinade on top of the strips and set out marinade at room temperature for 1 hour.
Preheat oven at 350 and bake for 25 mins.

Then turn strips over and add barbecue sauce and bake another 25 minutes.
And then enjoy.

  3. I don't really cook with much tofu - sometimes I use my stick blender to put it into pasta sauce though - I "hide" it on my guys! LOL. Your version looks good though. Cheers! Evelyn
